SWEET MUFFINS

Sweet Muffins are not negotiable, we chose what we want our muffins to be.. soft, full of fruit, homemade, tasty with different textures and then adapted the recipe. There has to be at least 3 components, the fruit, the muffin and two different textures in the toppings. So try drizzling the tops with chocolate and toasted hazelnuts or a lemon glaze, zest and toasted almond… I had one of these every morning when I was pregnant and had a 10lb baby….

Ingredients

· 3 cups Flour

· 1 1/2 cup Sugar

· 4 1/2 tsp B. Powder

· 1 1/2 tsp Custard Powder

· 1 1/2 c Milk

· 1 1/4 c Oil

· 3 Eggs

Method

1. Mix dry ingredients and wet ingredients in separate bowls.

2. Add flavours to wet ingredients and then fold together with dry ingredients.

3. Do not over mix.

4. Spray Muffin tins well and fill each tin evenly.

5. Place muffins into 180 degrees middle or top oven shelf for approximately 15 minutes

Note: Berries should be folded in after the wet and dry ingredients are mixed together to avoid discolouration
