Mums date & walnut loaf

Lather on some butter and have along side your morning cup of tea or coffee.

Ingredients

2 c sugar
2 c dates
800ml water
1 c sultanas
1 c currants
2 c walnut
100g butter
3 c flour
1 tbsp baking soda

Method

1. Heat oven to 160°C.

2. Add the sugar, dates, water, sultanas, currants and walnuts into a pot and allow to boil for 5 minutes.

3. Add butter to the pot. Allow to cool.

4. Add the flour and baking soda.

5. Transfer the mix to a large loaf tin and top with extra chopped walnuts.

6. Pop in the oven to cook at 160°. May take an hour or more. Test with a skewer. It is ready when the skewer comes out clean.

7. Cool before taking out of the loaf tin and store in baking paper or wax wrap.
